LEGUMES

Legumes are a popular food staple in Greece and every Greek kitchen will invariably have one type of beans or another in the pantry to use for a mid week meal, to offer a non meat dish.

Lentils, chick peas, broad beans, haricot beans and the white beans as used in Fava are the favourites.

In the traditional Greek diet, brought about through frugal times in history, meat was only eaten once or twice a week. In fact the Mediterranean diet is based on this, and so vegetables and legumes were used to replace meat and to create a filling and substantial meal.
