CHICKEN CASSEROLE RECIPE WITH RED WINE
KOTOPOULO KOKKINISTO

This chicken casserole recipe is a classic meal in Greece.
The chicken is well flavoured and has a lovely thick rich red wine sauce which makes it ideal for a winter meal. Kokkinisto generally describes a meal that is red, so it often refers to a meal that is tomato based.

1.5 kg chicken, cut into portions
olive oil
1-2 onions, finely chopped
2-3 cloves garlic, finely chopped
1/2 glass red wine
450g fresh tomatoes, or canned
1 cinnamon stick
2 cloves
1 bay leaf
1 tablespoon tomato paste
2 teacups water
salt and pepper

Clean and wash the chicken and cut into portions.
In a casserole saucepan, saute the chicken pieces until browned.
Remove the chicken and saute the onions and garlic.
Return the chicken to the saucepan.
Add all the rest of the ingredients to the pan and stir to mix in.
Cover and cook until the chicken is cooked through.
Keep a check on it to make sure it doesn't dry out and that there is enough liquid.
When ready, remove the cinnamon stick and serve.

This meal can be made with other meats such as beef or veal. It has a lovely rich sauce, so serve with some fresh crusty bread to dip in the sauce as the Greeks do. Serve with rice and a Greek salad and maybe artichokes or fried eggplant and zucchini.
