LETTUCE SALAD - MAROULOSALATA

Lettuce salad is a simple refreshing salad to make. It is easy and quick to make and goes well with most foods, especially pasta and cream based meals that need a crisp salad to counteract a rich meal.

This salad is made with the Greek salad dressing which is used in many salads, or to liven up plain steamed vegetables. Being used from extra virgin olive oil and lemon juice, it is much healthier than a rich mayonnaise.

1 small lettuce
2-3 spring onions
fresh parsley
dill (optional)
olive oil - extra virgin
lemon juice from 1/2 lemon
salt and pepper

In Greece they traditionally use either cos or iceberg lettuce, but feel free to use whatever you have.
Trim all the hard stalks, wash the lettuce thoroughly and leave to dry (or use a salad spinner to drain the excess water off).
Slice the lettuce finely and put in a salad bowl.
Finely chop spring onion, parsley (and dill if using), and add to lettuce. I haven't put in quantities of herbs. 1 - 3 tablespoons when chopped is usually sufficient, dependant on your preference for these flavours.

For the Greek salad dressing recipe:
Whisk the lemon juice, olive oil, salt and pepper together in a cup or small bowl until it becomes opaque - you may have to add a little more of oil or lemon juice to get this result. Generally you need at least double oil to lemon, but this differs depending on type of oil used.

Pour the Greek salad dressing over the lettuce salad and toss salad all together until the lettuce and dressing is combined. Serve.
