This Greek Barbecue Chicken Recipe, rich with aromas of lemons and herbs, is fantastic summer barbecue fare.

Greek Barbecue Chicken Recipe

This barbecue chicken has a dominant lemon and herb flavoured marinade which compliments the chicken.

In Greece, most cooking in the summer is done outside on barbecues, to reduce the heat in the house and to enhance the taste of the food.
The mouth watering aromas of lemon and herbed chicken barbecuing are very enticing. Serve with a Greek Salad or a fresh green salad, Tzatziki and rice or chips.


Ingredients

Extra virgin olive oil4 chicken quarters
4 - 5 tablespoons extra virgin olive oil
2 cloves garlic, chopped
2 lemons
a couple of sprigs of fresh thyme
freshly ground salt and black pepper

Preparation

LemonsIn a small bowl place the squeezed juice of the 2 lemons, garlic, olive oil, salt and pepper and the thyme leaves.

Mix with a whisk until well combined.

Place the chicken quarters in a dish and pour the marinade over.

Toss the chicken in the marinade until well combined.

Cover and leave in the fridge for 2-3 hours to marinate.

To cook the chicken, place on a heated barbecue and cook for 30 -40 minutes, basting with the marinade.
Turn occasionally until the meat is cooked through to the bone and tender.
