This barbecue chicken has a dominant lemon and herb flavoured marinade which compliments the chicken. In Greece, most cooking in the summer is done outside on barbecues, to reduce the heat in the house and to enhance the taste of the food. Ingredients4 chicken quarters4 - 5 tablespoons extra virgin olive oil 2 cloves garlic, chopped 2 lemons a couple of sprigs of fresh thyme freshly ground salt and black pepper PreparationIn a small bowl place the squeezed juice of the 2 lemons, garlic, olive oil, salt and pepper and the thyme leaves.Mix with a whisk until well combined. Place the chicken quarters in a dish and pour the marinade over. Toss the chicken in the marinade until well combined. Cover and leave in the fridge for 2-3 hours to marinate.
To cook the chicken, place on a heated barbecue and cook for 30 -40 minutes, basting with the marinade.
