In Greece, most cooking in the summer is done outside on barbecues, to reduce the heat in the house and to enhance the taste of the food. Ingredients 4 chicken quarters4 - 5 tablespoons extra virgin olive oil 2 cloves garlic, chopped 2 lemons a couple of sprigs of fresh thyme freshly ground salt and black pepper Preparation In a small bowl place the squeezed juice of the 2 lemons, garlic, olive oil, salt and pepper and the thyme leaves.Mix with a whisk until well combined. Place the chicken quarters in a dish and pour the marinade over. Toss the chicken in the marinade until well combined. Cover and leave in the fridge for 2-3 hours to marinate.
To cook the chicken, place on a heated barbecue and cook for 30 -40 minutes, basting with the marinade.
